Happy Memorial Day weekend everyone! I hope your weekends are filled with pools, ice cream, sun, music, cookouts, and more! Whenever Memorial Day comes around, I know that summer is here. One of my favorite things about summer is all of the sweeter, fruitier recipes you can make, such as blueberry pie! I thought I would bake a blueberry pie this Memorial Day weekend for my barbecue, and I wanted to share it with you guys so you can make it as well.
Enjoy!! :)
Ingredients:
2 store bought frozen pie crusts (my favorite is Pillsbury, but brand will work well.)
1 Cup of sugar
4 1/2 Cups of washed and dried blueberries
1 Lemon
5 Tablespoons of flour
A pinch of salt
Directions:
First, preheat your oven two 35o degrees and then unroll one of the frozen pie crusts and place it into a pie dish. Place the blueberries into a strainer, rinse, and dry them. Next, pour the blueberries into a large bowl, add flour, and toss until coated. Then, add the sugar, juice from one lemon, a pinch of salt, and then stir until combined.
Finally, add the berries into the dish with the pie crust.
Roll out your other pie crust, press a star cookie cutter into it and make several stars. Next, place the stars any way you like on top of the pie, brush lightly with egg wash, and sprinkle sanding sugar on top (the egg wash and sanding star are optional, they just add an extra glow and sparkle to the pie.)
Your pie is ready do go into the oven! Bake for 45-60 minutes, or until bubbly.
Serve and enjoy!
