Bake With Me: Lemon Squares


My motto is, when life gives you lemons, make lemon bars!


Lemon Squares Recipe: 

For the Crust:
1/2 pound (2 sticks) of unsalted butter at room temperature
1/2 cup of granulated sugar
2 cups of all purpose flour
1/8 teaspoon of kosher salt

For the Filling: 
6 extra large eggs at room temperature
3 cups of granulated sugar
2 tablespoons of grated lemon zest (4 to 6 lemons)
1 cup of freshly squeezed lemon juice
1 cup of all-purpose flour

Confectioners' (powdered) sugar for sprinkling at the end.

Directions: Preheat the oven to 350 degrees. For the crust, cream the butter and sugar until light in the bowl of an electric mixer with a paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter and sugar mixture until just mixed. Dump the dough into a greased 9x13 baking sheet. Flatten and press the dough until the bottom of the pan is evenly covered. Bake the crust for 15 to 20 minutes, until very lightly browned. Let it cool on a wire wrack and leave the oven on. For the filling, whisk together the eggs, sugar, lemon zest, lemon juice and flour. Pour over the cooled crust and bake for 30 to 35 minutes, until the filling it set. Let cool to room temperature. 
Cut into triangles, sprinkle with confectioners' (powdered) sugar, and enjoy!
